Instructions

  1. Boil 1/2 cup of water on stove top, stir in 1/4 cup of quinoa then let cook for 10 minutes. Turn off heat and let sit for 5 minutes.
  2. Wash, chop, then place vegetables in a mixing bowl. Add olive oil, vinegar and salt. Rinse and drain chickpeas.
  3. In the following order place the quinoa, vegetables, olives, chickpeas in a bowl. Then add 2 tbsp of hummus, top off with freshly ground black pepper.
