Instructions

  1. Place olive oil in a large non-stick pan over medium heat
  2. Stir in minced garlic and cumin for 1 minute
  3. Add black beans, tomatoes, corn, jalapeno, and quinoa. Add water after one minute of stirring then bring to a boil.
  4. Cover pan, reduce heat and simmer for 20 minutes or until quinoa is cooked
  5. Remove pan from heat and let sit for 5 minutes
  6. Pour food into a bowl and top with diced avocado and lime wedges. Enjoy.
