Instructions

  1. Cook the rice: If you don't have any cooked rice on hand, cook the rice as per the instructions on the package.
  2. Chop the onions and mince the garlic. Heat a frying pan over medium-low heat and add the oil and onions. Cook onions for about 4 minutes, or until soft. Then add the garlic and cook for another minute.
  3. Add the drained black beans to the pan, along with the cayenne, cumin, chilli powder, and cumin (or whatever other spices you like). Stir until warmed through.
  4. Add chopped cilantro and lime juice to the rice and mix.
  5. Assemble the burrito: Add the rice, beans, and whatever other toppings you like to the burrito and serve.
